December 2002 Membership Report

 

     We had a good turn out for the Chatta-BOO-GA Weekend – I celebrated the big 50 with all my TALL Club Buddies, and we had a great Halloween Dance/Party with everyone in costume. 

 

     Then, we had the chili cook-off at our home – if you missed that, you missed some really good chili and good eating!!!  Mimi won first prize for her chicken chili recipe, Mary Ann won second prize for her beef chili, and I won third prize for vegeterian chili (which I had fixed as a joke thinking no one would really eat it).  Everyone who was there ate themselves silly and had a really good time!

 

     At the 57 th on Nov. 15 th, we met Ken Celmer, a restaurant owner, who enjoys music, travel, cooking and yoga, and April Raab, a QA Consultant, who enjoys gardening, camping, and other outdoor activities.  They both seemed to have a good time meeting our members – please make welcome in the future.

 

     We have a really busy social schedule coming up (as usual) for December – we enncourage all to attend as much as you can – we always have a good time in this season of festivities!

No-Cook Summer Chili  (Crock Pot Winter Chili – no meat)

1 medium size jalapeno pepper

½ small red onion

2-16 ounce cans pork and beans

1-17 ounce can whole kernel corn, drained

1-16 ounce can small white beans, drained

1-16 – 19 ounce can black beans, drained and rinsed

1-14 ounce can chili style chunky tomatoes

2 (or more to taste) tablespoons chili powder ( I used 4 tbs. in my chili for the cook-off)

 

Slice jalapeno pepper lengthwise in half – remove and discard seeds.  Finely chop pepper and thinly slice red onion.

In large bowl, combine jalapeno pepper with undrained pork and beans, drained corn, white beans, black beans, and chili powder.  Sprinkle with onions on top and cover bowl with plastic wrap and refrigerate for Summer Chili.  For Crock Pot Winter Pot Chili, put everything into the crock pot and cook on low for 4-6 hours – much better this way!!!
